Take home a sweet treat!  When daytime temperatures get to 5 degrees Celsius and night time temperatures fall to around -5 degrees Celsius, the sap in maple trees starts to run. A hole is then drilled into the trees. The sap runs through a tap into a bucket (or in the modern way, through plastic tubing to a central repository). The sap is collected and boiled to reduce into syrup. It takes 40 litres of sap to produce 1 litre of sweet syrup.   You can buy maple syrup year-round at farmers' markets, but for a real treat, visit a sugar bush from late February through April and see the process for yourself.    You will find them throughout the province - consider White Meadows Farms near Niagara and Fulton's Pancake House and Sugar Bush near Ottawa.
